Depending on the type of professor you work best with. make sure you talk to any upperclassman that may have taken the class the prior semester or year to find out the teaching style. My major in particular I am studying Equine Science, so everyday I am working with horses, my professors are all amazing at their job and they work so well with all the new students that may just be coming into the major from outside of the horse world. I myself came into this major knowing nothing about riding and now I am comfortable enough to ride on my own and teach myself more as I go and progress as a rider. Workload is something else, because you are learning Anatomy and physiology of the horse and you are having to memorize each system and parts of the animal. In other words its a lot of late nights at the library using flash card and diagrams, labeling and re-labeling all the same diagrams. This major is really hands on so you are learning as you are in class and in your riding labs because you are always working with the horses and you are learning tack and practicing different things as you are there.
