As a small aside, the picky eater in me had a difficult time adjusting to the food on campus. Living in a dorm with a kitchen has been my greatest decision. The dining hall can be chaotic and no conducive for anyone with an anxiety disorder, but there are other options, and to-go plates are available every day.
The demographic of the students is almost 95% white; ethnic, political, and sexual minorities were incredibly marginalized by the students and administration (however not by the faculty). While I was a student, the administration refused to sponsor an LGBT club and it was forced to have underground meetings, but funding and support for religious groups and agendas were almost unlimited. A college experience, on top of a solid education, is about interacting, supporting, and learning from people with diverse backgrounds and experiences. This process becomes a foundation for learning who we are and who we want to be as adults. I would hope that for the majority of prospective students, this is what they want- and for that reason.
